Last weekend, Wally’s at Resorts World Las Vegas served up the pricey meal, a 195-day dry aged bone-in porterhouse ribeye from the Brooklyn butcher Fleishers Craft Butchery. A Las Vegas restaurant is boasting that they’ve served the ‘most expensive steak ever sold’ – to the tune of $20,000. The $20,000 steak was prepared by Executive Chef Ryan Kluver, who cooked it over almond wood and Bichotan Japanese charcoal and seasoned it with truffle salt and black pepper. On the scent front, the reboot is more of a return by popular demand at Jo Loves, the fragrance brand founded by Jo Malone CBE. I know that I have already touched on the topic of packaging this week but I would like to return to it. Used as mayonnaise is, with tuna or prawns for sandwiches or on the side of a salad plate, it is proving to have developed quite a cult following. Salad Cream – Known as the poor man’s mayonnaise, salad cream has experienced something of a resurgence in the last few years. But for years Carbon Theory has been bombarded with almost daily requests to make a liquid version of this much-loved original. This liquid cleanser produces a nice lather, has a refreshing zing to it thanks to its tea tree oil content (also a natural antiseptic) and, of course, contains plenty of carbon to help draw out bacteria and excess oil.

The pouches hold one litre of lotion, so they’re more expensive than the 250ml bottle but, of course, they will last longer, too. The Hotel Allalin offers a package that includes a fresh truffles for sale breakfast buffet, a six-course evening meal, and free use of many cable cars and buses in the valley – as well as a daily lunch pack and a Metro Plus and aperitif voucher.

We trumpet small farms on our menus and patronize green markets — fetishizing the exquisite greens we sell at jaw-dropping price points. Maybe this is true of all small business. Our industry is irate that the precipice we’ve been driven to stems from mandated months of closure and that we face an incredibly uphill journey, with none of the assistance that big business receives. The White House’s Great American Economic Revival Industry Groups, the task force charted with the health and wealth of our nation and “Opening Up America,” obsesses that a national shutdown is not a long-term sustainable solution. White truffles are in season starting in October, and the season lasts a few short months.
